There are some exceptions at times (like pickles), but for the most part, I hate the texture of crunchy vegetables. Particularly onions, broccoli, and cauliflower, but pretty much any veggie, is worse uncooked or undercooked imo. I hate most raw vegetables by themselves or in salads, but undercooked ones may be even worse because I was promised and expecting something cooked. Crunchy peppers or onions ruin a pizza as one example. Under-done carrots and potatoes in a curry, which I had yesterday, is another perfect example.
This may not be a universally unpopular opinion but I definitely feel like I’ve had a lot of people seem surprised by me not liking raw veggies.

lol people seem to think it’s one extreme or the other. I never boil anything at home. I like to stir fry and oven roast veggies. Works well for me, and maybe some people might hate the results but I’m willing to bet that most people wouldn’t.
I was raised in over cooked vegetables. By a nutritionist who was convinced she was a master chef. Ewww.
I cook my veggies, but lightly. Mostly a mix or broccoli, romanesco (seasonally available) and carrots in a 425° oven for 5-6 minutes. Slightly softened but still crunchy.
I can understand that, some of my food dislikes are permanently ingrained due to being made to eat things I didn’t like. I think my mother may also have over cooked things but for me I think it pushed me the other way compared to you. Maybe because that is what I was used to, the crunchy extreme isn’t my jam. I do maintain though that I don’t require things to be mush. In fact that’s by far the grossest thing you can do to broccoli imo
Yeah, my parents absolutely instilled some food hates in me. Ironic since my mother was forced to eat things that her parents knew she disliked already, turning into lifelong hate… then did it to me. At least I broke that particular idiocy with my own cooking and those I cooked for.
