There are some exceptions at times (like pickles), but for the most part, I hate the texture of crunchy vegetables. Particularly onions, broccoli, and cauliflower, but pretty much any veggie, is worse uncooked or undercooked imo. I hate most raw vegetables by themselves or in salads, but undercooked ones may be even worse because I was promised and expecting something cooked. Crunchy peppers or onions ruin a pizza as one example. Under-done carrots and potatoes in a curry, which I had yesterday, is another perfect example.

This may not be a universally unpopular opinion but I definitely feel like I’ve had a lot of people seem surprised by me not liking raw veggies.

    I am at the other end of the spectrum: I love raw veggies! Raw carrots are fire, with mayo. Green beans should be just blanched and kept almost crunchy. Small raw zucchini? Amazing!

    Personally, almost unique exception is aubergine, that I prefer well cooked. And still, round purple aubergine, cut think and fried should stay raw in the center

          No, sorry, I meant as a raw veggie. I’ve never seen anyone cook them. Other than put it on top as a garnish. They can be pickled, though. I just mentioned it since I think it’s pretty much the far end of the spectrum in raw and crunchy veggies. I like them, but I’ve seen a lot of people not like the taste and texture.
