There are some exceptions at times (like pickles), but for the most part, I hate the texture of crunchy vegetables. Particularly onions, broccoli, and cauliflower, but pretty much any veggie, is worse uncooked or undercooked imo. I hate most raw vegetables by themselves or in salads, but undercooked ones may be even worse because I was promised and expecting something cooked. Crunchy peppers or onions ruin a pizza as one example. Under-done carrots and potatoes in a curry, which I had yesterday, is another perfect example.
This may not be a universally unpopular opinion but I definitely feel like I’ve had a lot of people seem surprised by me not liking raw veggies.

Me? I think it depends on the vegetable, and the use case.
Like broccoli? It sucks in crudites. You can’t really taste it, it’s crunch at the florets and outright unpleasantly hard at the stem. But you give that even a light steam,and the flavor opens up. The stems become tender (if not flavor rich).
Carrots though? Fucking great raw, as well as cooked. They taste different, the mouth feel is distinct, and they provide a degree of satisfaction as part of a raw veggie platter that tops any of the usual options. 10/10 raw and 10/10 steamed, roasted, stewed, candied, or pretty much any way.
Peppers are similar imo. Onions, I err on cooked for the most part, but some dishes are great with some diced onion. Chili, hot dogs, some salads, etc.
Green beans though? They suck raw. They’re acceptable cooked al dente, but you also don’t want them cooked to fill soft either. Might as well just open a can at that point.
Peas? Suck raw, imo. Never seen an application for them. I pan roast those suckers with some thyme and butter, and I’m in heaven.
But food is always subjective. About the only thing that’s objectively true is that some amount of fats and salt make anything more likely to be enjoyed. Our tongues and brains are just wired that way. But even there, preferences can override, and three preparation matters because it can be over done.
One thing that I’ve learned in my fifty odd years is that if someone enjoys something I don’t, I can just be happy they like it. I may offer to expose them to what I enjoy, and will usually jump at a chance to experience what they enjoy, but ain’t no room in my life for hating on someone’s food preferences. So, in that spirit: fuck raw veggies, my lemmydawg!
