Keep in mind the 64GB is eMMC internal storage while the others (256,512) are NVMe SSD.

eMMC is considered more of an outdated storage option. You’ll probably stick a microSD in (if you only have 64GB) so maybe it’s a moot point.

I’d add a 2nd Pi-hole (sounds like you have one already?) for redundancy.
